  2. cantidad suficiente aceite vegetal
  3. 1 litro caldo de pollo
  4. 3 jitomates
  5. 1/4 cebolla
  6. 1/2 litro agua
  7. 1 diente ajo
  8. 1 rama epazote
  9. cantidad suficiente cilantro
  10. 1 chile chipotle
  11. al gusto sal o consomé de pollo en polvo
  12. al gusto pimienta
  13. Para acompañar
  14. 1/2 taza crema ácida
  15. 1/2 taza queso fresco, panela o cotija
  16. 75 gr chicharrón
  17. 1 aguacate
  18. al gusto limón

  1. Corta las tortillas en tiras delgadas.
  2. En un sartén pon a calentar aceite, cuando esté caliente fríe las tiras de tortilla. Cuando estén doradas colócalas en un recipiente con papel absorbente para retirar el exceso de grasa.
  3. Para el caldillo, en la licuadora muele los jitomates, la cebolla, el ajo y el chile chipotle, junto con el medio litro de agua.
  4. Prepara la olla donde vas a hacer la sopa, ponla en la estufa para que se caliente ligeramente añade una cucharadita de aceite vegetal, añade la salsa que licuaste, pásandola por el colador.
  5. Deja que la salsa se cocine por unos 10 minutos, mueve ocasionalmente para que no se queme y los sabores se mezclen bien, una vez que hierve y cambia de color añade 2 cucharadas de consomé de pollo en polvo o sal, mezcla y añade el caldo de pollo (si el caldo de pollo ya tiene sal no añadas más hasta probar). Tapa y deja que hierva.
  6. Cuando esté hirviendo añade el cilantro, el epazote y media taza de tiras de tortillas fritas para que la sopa espese un poco, pruébala para rectificar el sazón.
    Tapa y deja cocinando a fuego bajo unos 5 minutos más y el caldo estará listo.
  7. Para servir corta el queso en cubos y corta el aguacate.
  8. Ahora, coloca en un plato hondo tiras de tortilla fritas, añade el caldo caliente.
  9. Agrega cubos de queso, aguacate rebanado, crema y trocitos de chicharrón, puedes añadir cilantro picado y unas gotas de limón. Deliciosa!!!!!
